Baked Potatoes

Take 6-8 medium russet potatoes, scrub well and bake at 350° for 1 hour While potatoes are baking, mix the following in a large mixing bowl: 2/3 stick margarine 2 diced green onions 3 slices bacon, diced & cooked crisp 1/2 cup shredded cheddar cheese 1/2 cup milk 1/2-1 tsp salt 1/4 tsp pepper When potatoes are done, hold them in your hand in a potholder, one at a time, and cut off top 1/3 of potato Scoop out all of the cooked potatoes from tops and bottoms, being careful not to tear the bottom half Mix the cooked potato with the ingredients in a bowl with a mixer til blended Stuff the mixture back into the bottom shells, using all of the potatoes Sprinkle with Parmesan cheese and a little paprika Store in freezer in airtight container for up to 3 months .
