Banana Bread - Cake Mix Recipes From: Nancy N in Florida. Great idea for those with plenty of cake mixes. My friend brought us a loaf of her Banana Bread for our anniversary. It was so good. She said its her easiest recipe ever. Ingredients: 1 box of yellow cake mix 3 mashed ripened bananas 3 eggs Misc.... chocolate chip, dates, chopped nuts Directions: She takes 1 box of yellow cake mix, adds 3 mashed ripened bananas, and 3 eggs. Bakes at 350 degrees for approx 35 mins. (Ovens may vary) A good way to use overripe bananas. She adds whatever else is around if she wants to fancy it up. She added dates and chopped walnuts to ours and it was wonderful. She said she has used chocolate chips and other stuff in the recipe too! My Notes: By the way, you can mashed the 3 bananas in advance and then freeze the so they are ready when you are in the mood to bake. Nice to never have to toss the over ripe bananas in the trash.
