Hearty Southwestern Lasagna

Ingredients:
1 1/2 pounds of ground beef
one small yellow onion
10 Mission corn tortillas
I envelope of Lawrys taco spices
1 tsp of Lawrys seasoned salt
1 cup of diced tomatoes. canned or fresh
2 cans (8 oz) tomato sauce
1 can Ortega diced chilies
8 oz carton of Ricotta cheese
8 oz of cottage cheese
2 eggs
2 1/2 cups of Monterey cheese
8 oz of Sharp cheddar cheese - grated .. just me
but I don't care for the pregrated cheese not as
fresh tasting....
1 small can of California sliced olives .
Directions:
In large skillet brown beef, with onions, drain.
Add taco seasoning and salt, tomatoes, tom.
sauce,and chiles. Mix well and bring to a boil then
simmer on LOW for 5 minutes.
Combine ricotta cheese and cottage cheese and
eggs.
Save some cheese to go on top of casserole.
In bottom of 9 X 13 pan (greased slighlty ) make
a layer of torilla cut in half.
Spread with about 1/2 of cheese mixture. then
layer on meat, repeat layers. Top layer should be
tortillas and the egg/ cheese mixture and topped
with some remaining cheese and then sliced olive
or green onion slices .
My Notes:
We or I make this every New Years when we are
all Turkey-eed out (gobble ~gobble) and my
daughter likes to take the olives and make the year
in the lasagna .....
