Potato Soup Ingredients: 3 large potatoes (peeled & cut into small pieces) 1 medium onion (diced) 1 or 2 ribs of celery (diced) 1 small jar pimentos, 1 qt 1/2 n 1/2 (you may not need all of it), 2 cups of water, 2 cups of chicken broth, 1/2 jar cheese whiz (you can leave this out if you don't like) 1 stick butter salt & pepper to taste. Directions: Cook potatoes in water and chicken broth until tender. With old fashioned potato masher mash potatoes (leave in water/broth). Melt butter in skillet add onion & celery saute until tender but not brown. Add butter & vegetables to potatoes; add pimento, salt & pepper (& cheese whiz if you want it). Mix until cheese is melted or everything is mixed well. Add enough 1/2 n 1/2 to make creamy but do not too thin. Return to low heat & warm (do not boil this will curdle 1/2 n 1/2). My Notes: Hey, she is from the south so it does have lots of fat in it, what can I say...It's gooooood. Southern cook good
